If you want a daily easy, quick, healthy, nutritious and satisfying meal, look no further! Vegan patties in the oven with potatoes with perfect texture and flavor!

Our vegan patties are made from black beans, chickpeas, brown rice and oats. We recommend them with our vegan lemon sauce which makes them incredibly hearty, juicy and delicious.

We recommend roasting them in the oven, but of course you can also fry them and grill them as they don't fall apart. If you think the texture should be firmer, just add some extra oats to your mixture. Don't overdo it though, as they might come out dry.

Our food is easy and quick in the sense that it requires very little time from us to prepare, about 20 minutes. That is, as much as is needed to mix all the ingredients for our mixture, to shape our vegan patties, to prepare the potatoes and place our food in the oven.

Children who are more picky eaters should also try it as we have found it to be a huge success 🙂

Excellent recipe also for those who avoid salt. Our vegan patties can also be made unsalted, just don't add the salt and the soy sauce.

Ingredients

Vegan patties

  • ½ cup black beans
  • ½ cup chickpeas
  • ½ cup brown rice
  • ½ cup oat flakes
  • 3 Tbsp soy sauce
  • 1 Tbsp red vinegar
  • 3 tsp onion powder
  • 1 tsp sweet paprika
  • 1 tsp ginger powder
  • ½ tsp smoked paprika
  • ½ tsp curry
  • ½ tsp garlic powder (optional)
  • ¼ tsp dried ground cayenne pepper (optional, if you want it spicier)
  • tsp white pepper (optional)
  • salt and pepper

Vegan lemon sauce (optional)

  • 4 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 tsp mustard

Instructions for vegan patties

  • Soak the beans and chickpeas for 8 hours. Alternatively, soak in a pot of boiling water for two hours with the lid on.
  • Boil the black beans for 45 minutes and the chickpeas and brown rice for 30 or until very well cooked.
  • In a bowl, mash the beans, chickpeas and rice with a fork, add all the remaining ingredients for our vegan patties and mix well.
  • Preheat the oven at 180‎°C/356°F
  • Wash and cut the potatoes, place them in a large baking pan, add olive oil, salt and pepper and mix.
  • Oil your palms, shape the vegan patties, place them in the baking pan on top of the potatoes and bake for about an hour or until your food is golden brown.

Instructions for the vegan lemon sauce

  • Add all the ingredients for the vegan lemon sauce to a bowl and stir well.

Serving

  • Serve in a large shallow dish, accompanying with lemon or pouring the vegan lemon sauce over your patties.
  • Serve with any fresh salad, like cabbage and carrot or lettuce and arugula. You can see our salads here.

Notes

Optionally, to have a firmer dough, leave it in the refrigerator for an hour.
If you want your vegan patties to get a crust on both sides, you can turn them on the other side after about 30 minutes.
