1cupflour for all uses.(Ideally, we replace the 2 tbsp with cornmeal)
⅓cuplukewarm water
1tspyeast(Filled)
½tspsugar
½tspsalt
3Tbspolive oil
1tspground flaxseed(optional)
Instructions
In a small bowl, mix the warm water, the yeast and the sugar, cover it and let it rise for 5 minutes.
In a second, large bowl, mix the all-purpose flour (both cornflour and flaxseed if you add) and salt and mix.
Once the yeast has risen, add to the large bowl all the contents of the small bowl and 2 tbsp. olive oil and mix well. Cover with a towel and let it rise for 15 minutes.
Heat in a large pan 1 tbsp. olive oil and fry on medium heat for 10 minutes on each side or until golden brown.
Serving
We can do variations of vegan fried bread adding various materials such as:
sliced olives
grated carrot
sun-dried tomatoes
oregano
thyme
We can also make it sweet, sprinkling it with sugar or cinnamon but also adding malt, maple syrup or agave.
We want it to cook it slowly in low temperature (in order to have a golden colour) and not at high temperature (as this way will get burn on the outside and inside it will be almost raw).If we want we can add an additional 1-2 tbsp. olive oil in the fried bread.We can split our dough in two and make two individual fries.The thinner our dough is, the crispier it will turn out. The thicker our dough, the fluffier it will come out in the middle.
