Guacamole. A very simple Mexican dip with a wonderful exotic aroma of lime and fresh cilantro. A real treat for those who follow a vegan diet, and not only!

½red bell pepper (or Florina pepper)finely chopped
3limes or 2 lemons(their juice - about 9 Tbsp)
3Tbspfresh cilantro (or parsley)finely chopped
1tomato (without the seeds)finely chopped

Guacamole
In a bowl, mash the avocados with a fork, add the lime juice and garlic and mix. The texture is very important. Slightly mash the avocados, leaving some larger pieces in.
Add all the remaining ingredients and mix lightly.
Serving
Serve as: Dip with nachos, pitas, breadsticks, or veggie sticks (such as carrots or celery). Side dish, mostly in Mexican dishes, such as burritos or fajitas. Sauce in salads. It pairs well with nachos, lettuce, corn, peppers, carrots, and red beans. Sauce on sandwiches, bruschettas and vegan wraps.
It pairs wonderfully with drinks such as Sangria and Margarita cocktail.
Notes
Because the coriander It has a special taste, if we haven't tried it before, we add it little by little and trying it until we find the ratio we like.
It's important your avocados to be ripe. You can understand this from the texture, but also the color of the stalk. They are ripe and ideal for consumption when they're not hard and are lightly pressed, and when their stalk is brown at its base when we take it out. If it's light green they're unripe and if it's black they're overripe.
You can easily cut an avocado, slicing it in half lengthwise, removing the pit and scooping it's soft inside part with a large spoon.
You can also add yellow bell pepper or finely chopped lettuce.
If you don't serve the guacamole right away, store in the fridge in an airtight bowl or other container, after you've placed an avocado pit in the center of the bowl, so that it doesn't turn brown.
Brush the sliced avocados that you don't use immediately with some lemon so they don't turn brown.
You can keep the avocado pits and plant them directly in the soil.
