Sort through the fava beans and pick out any tiny stones. Then rinse it in a strainer under running water.
Put all the fava ingredients in a saucepan over high heat until it starts to boil.
Next, cover the saucepan and simmer for about 1 hour, stirring occasionally.
Then, stir well, preferably with a wooden fork, to puree the fava beans.
Lower the heat and stir frequently until liquids are almost absorbed. Your mixture should be creamy and not too thick.
Serving
It's usually served cold, but it's as enjoyable if you eat it while it's still warm.
Use a shallow and small plate. With a spoon, place the fava making circles from the middle of the plate outwards.
Garnish each dish by adding, in the following order, ½ onion cut in half and then sliced, 1 tbsp. lemon juice, 1 tbsp. extra virgin olive oil, 1 tbsp. capers, ½ tbsp. oregano. Alternatively we can accompany with:
Caramelized onions
Sautéed Florina peppers, chopped
Sun-dried tomatoes (in oil) cut into thin strips
Roasted vegetables
Notes
Soaking the fava beans will speed up the whole process, as the beans will have already been softened enough, before you even start boiling them.
If you want an ointment-like texture, you can put the fava beans in the blender.
