Tzatziki is probably the most popular appetizer of traditional Greek cuisine. It's very popular because of its taste, but also because it's served both as an appetizer and used as a sauce in traditional Greek souvlaki.

Vegan tzatziki with tahini and garlic. The famous traditional Greek tzatziki in a vegan version that you will definitely keep on your recipes. Trust us! Your non-vegan friends won't tell the difference!

Ingredients

  • 2 Tbsp tahini
  • 2-3 cloves garlic crushed, depending on how intense you want it
  • ½ cup cucumber grated
  • 2 Tbsp fresh parsley finely chopped
  • 2 lemons (the juice)
  • 1 Tbsp olive oil
  • 1 Tbsp red vinegar
  • 2 Tbsp water
  • salt

Instructions

  • In a bowl, mix all ingredients well, except the cucumber and parsley, until they are well mixed. Then fold in the cucumber and parsley.
  • Add garlic, salt, lemon or vinegar to taste.
  • You can make it more liquid by adding 1 Tbsp of water. If you prefer it thicker add ½ tsp of tahini.

We don't recommend using whole wheat tahini. At least not the first time you try the recipe. Not because the vegan tzatziki won't be a success. It will be (I often make it that way). But its flavor will be a bit tart and its color a bit darker. If you decide to put whole wheat tahini, you may need some more lemon and garlic.

  2. We are very happy Dina! Yes, we can also use wholemeal tahini. In fact, we almost always use whole grains. In addition, if you want, you can make a lighter and cooler sauce by removing the garlic and vinegar and adding, if necessary, a little more water. So it is an ideal sauce for vegan sandwiches and wraps 🙂

    Exceptional! I had it tasty a few years ago when I visited Greece but the last time I came to Greece I was vegan so I didn't have any and I missed it. This recipe is exactly how I remeber it! Congratulations! I will try more of your recipes soon!
